Charcoal remembers everything you do to it.
We burn rubberwood down to arang ourselves, out back, before the sky goes dark. Gas is faster. Gas has no memory. Charcoal holds the smoke in the meat, and the meat tells you later.
The trick was never the marinade — turmeric, lemongrass, a little candlenut, same as my father wrote it. The trick is the hand on the fan. Too shy and the satay steams grey. Too greedy and you feed the flame instead of the meat.
So we let you try it. Fan the pit up above. Keep the coals in the green band, cook it to the top, and don't panic. Panic is how you make charcoal.
